Recipe and Quote of the Day!

Okay so it's been a long but yet wonderfully fun 4th of July weekend. Time to rededicate myself into healthy living especially my eating habits! Considering it's been really warm and will continue to be, personally, I like to eat more salads. Here's a yummy summer recipe that you can eat over some fresh greens.

Cold shrimp stuffed avocado

3 large avocados juice of 1 lemon 1 pound cooked shelled shrimp (reserve 6 whole shrimp), coarsely chopped 1 hot chili pepper, peeled if fresh, seeded, washed and chopped fine 1 hard-cooked egg, chopped 2 dozen pitted green or black olives, chopped mayonnaise pepper 3 Tbsp minced fresh coriander leaves or parsley Cut avocados in half lengthwise, pit, and scoop out the flesh. Put the flesh into a bowl, then sprinkle the shells with a little lemon juice to prevent darkening. Mash the avocado flesh with a fork. Add the shrimp, hot pepper, egg and olives and mix well. Add enough mayonnaise, beginning with 1/3 cup, to bind the ingredients together. Pepper to taste. Stuff the avocado shells with this mixture. Top each with one of the reserved shrimp and sprinkle with coriander. 6 servings.

Recipe and Quote of the Day!

Well the 4th of July is quickly approaching and an amazing party is bound to happen in most or our lives this weekend!! So here is the most common paleo friendly alcoholic drink!

NorCal Margarita

  • 2–3 shots of 100% agave tequila.

  • Juice and pulp from one lime.

  • Shake it all up with some ice.

  • Add soda water to taste.

Here's why this drink rocks:

  1. Tequila is fermented agave juice, which makes it gluten and starch-free.

  2. Insulin release is blunted by lime, helps maintain insulin sensitivity.

  3. Alkaline kidney load from limes

  4. CO2 bubbles help ethanol enter blood stream more quickly, so you can drink less for same effects.
