Day 4 of Nutrition Challenge

Cloudy with a Chance of Meatballs!

Breakfast of Champions:
4 egg whites
2 pieces of Trader Joes no nitrates, no preservatives thick cut turkey bacon
green onion
mushrooms
Sauteed with 1/2 tbsp of organic butter
2 cups of coffee with heavy cream and stevia

So I was cleaning and running errands all day I some how forgot to eat lunch! Oops..not a good thing but I'm making a great dinner and catching up on some DVR'd shows!

Dinner:
Melisa's Homemade spaghetti

Ingredients:

1.25lb ground turkey
1 tbsp coconut oil
2 cups broccoli
2 stalks of celery
1/2 yellow onion
1-2 cloves of garlic
1/2 cup mushrooms
2 cups of trader joes organic spaghetti marinara sauce
1 large spaghetti squash

Directions for sauce:
Brown turkey with onion, garlic and 1 tbsp of coconut oil. Add in chopped broccoli, celery, mushrooms and let cook on medium for a few minutes. Add marinara sauce and seasonings. I like mine spicy, so I added cayenne pepper, salt, pepper, Italian seasonings and let simmer for approximately 15 minutes on low, covered.

Directions for squash:

Cut large squash in half and remove seeds. Place in a 8x11 cooking dish and add 1/4-1/2 cups water. Place cut side down in water cover with plastic wrap and microwave for 10 minutes. Once done, take a fork and shred the inside of the squash making it look similar to noodles.

Here is my finished product! Yes, I ate all of it! YUM!
